Samoosas. This authentic recipe is simple to make and guaranteed to impress.

- 500 g minced beef or chicken mince
- 1 medium onion, finely chopped
- 2 small potatoes, boiled & finely diced (very traditional)
- 1-2 green chillies, finely chopped
- 1 tsp garlic & ginger paste
- 1 tsp salt (adjust to taste)
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp masala (or mild curry powder)
- ½ tsp Kurkuma
- Black pepper to taste
- Handful fresh coriander, chopped
- 1-2 Esslöffel Öl
- Samoosa pastry strips (from the freezer section)
- Flour paste (2 tbsp flour + water to make a glue)
- Öl for deep frying
1. Make the filling
Heat oil in a pan.Add onions and cook until soft.Add garlic & ginger, chillies, and spices. Cook until fragrant.Add mince and cook until browned and dry (important — watery filling = broken samoosas). Mix in potatoes and fresh coriander.Taste and adjust salt/spice.Let the filling cool completely.2. Fold the samoosas
Separate pastry strips and keep covered with a damp cloth.Place a spoon of filling at the bottom of the strip. Fold into a triangle (classic samoosa fold).Seal the edge with flour paste.3. Fry
Heat oil on medium heat. Fry samoosas until golden brown and crispy. Drain on paper towel.
