Wash the apricots thoroughly, remove the stones, and cut larger fruit into smaller pieces if desired.
Place the apricots and water into a large heavy-based pot.
Simmer over medium heat for about 15–20 minutes until the fruit softens.
Add the sugar and stir until completely dissolved.
Stir in the lemon juice.
Bring the mixture to a gentle boil and cook for 30–40 minutes, stirring frequently to prevent sticking.
Continue cooking until the jam reaches setting point (about 105°C), or test by placing a small spoonful on a chilled plate—if it wrinkles when pushed, it's ready.
Skim off any foam from the surface.
Pour the hot jam into sterilised jars, seal immediately, and allow to cool completely.
