Cook the dates: In a pot, boil chopped dates and water together until soft. Stir in baking soda and let it foam slightly. Set aside to cool.
Cream butter and sugar: In a bowl, beat butter and sugar until light and creamy.
Add egg and vanilla: Mix in the egg and vanilla essence.
Combine dry ingredients: Add flour, baking powder, and salt. Mix into a soft dough.
Assemble: Press half the dough into a greased baking tray. Spread the cooled date mixture over it. Top with remaining dough (you can crumble it over or press gently).
Bake: Bake at 180°C for about 25–30 minutes until golden.
Finish & slice: Let it cool slightly, then cut into squares or slices. Dust with coconut or icing sugar if desired.
