- 2 tazas white maize meal (pap / mielie meal)
- 1–1½ tazas warm water (as needed)
- 1 cucharadita sal (optional, to taste)
- extra water for adjusting consistency
Mix the dough:Place the maize meal in a bowl. Gradually add warm water, mixing until you form a thick, smooth batter. It should be softer than stiff pap but not runny. Ferment:Cover the bowl loosely with a lid or cloth. Leave it in a warm place for 2–3 days to ferment. Stir once a day. The mixture should develop a sour smell and small bubbles on the surface. Season (optional):Once fermented, stir in salt if using. Add a little water if the mixture has thickened too much. The texture should be spoonable. Prepare for steaming:Grease a heatproof bowl, tin, or cloth-lined steamer container. Pour in the fermented maize mixture, smoothing the top. Steam:Place in a steamer over gently boiling water. Cover and steam for 1½–2 hours, checking water levels and topping up as needed. Test for doneness:The bread is ready when it is firm, fully set, and no longer sticky in the centre. Cool and serve:Allow to cool slightly before slicing or scooping.
