Iinkobe (Boiled Corn Salad)

- 2 tazas dried corn kernels (iinkobe)
- water (for soaking and boiling)
- salt (to taste)
- 2 cucharada mantequilla o margarina (opcional)
- 1 cebolla pequeña, finamente picada (opcional)
- fresh herbs like parsley or coriander (opcional)
Soak the corn: Rinse the dried corn and soak it in plenty of water overnight (8–12 hours). This helps soften the kernels and reduces cooking time.
Boil the corn: Drain the soaking water, then place the corn in a large pot. Cover with fresh water and boil on medium heat for 1½–2½ hours, until the kernels are soft. Add more water if needed.
Season: Once soft, drain excess water. Add salt and butter/margarine while still hot and mix well.
Make it a salad (optional): Let the corn cool slightly, then add chopped onion, herbs, and any optional add-ins you like. Mix gently.
Taste & adjust: Adjust salt, add a squeeze of lemon or a dash of vinegar if desired.
