Start by placing the minced beef in a large bowl. Add salt, pepper, paprika, garlic powder, herbs, Worcestershire sauce, and a small splash of cold water. Mix until the meat becomes slightly sticky and well combined.
Gently fold in the grated cheese. Try not to overmix so the cheese stays in small pockets inside the meat.
Shape the mixture into sausages, a long coil, or patties. If you have casings, you can stuff it into links, but shaping by hand also works well.
Place the shaped sausage in the fridge for 30–60 minutes. This helps it firm up so it holds together while cooking.
Cook on medium heat in a pan, oven, or on the braai. Turn it often so it browns evenly and the cheese melts slowly without leaking out.
Let it rest for a few minutes before cutting so the cheese stays creamy and doesn’t all run out.
