Ingredientes
  

  • 1 kg minced beef or lamb
  • 250 g offal (liver, heart, or tripe), finely chopped or minced
  • 1 cebolla grande, finamente picada
  • 2-3 dientes de ajo picados
  • 1 cucharadita cilantro molido
  • 1 cucharadita pimentón
  • 1 cucharadita pimienta negra
  • 1-2 cucharadita salt (to taste)
  • ½ cucharadita cayenne or chili powder (opcional)
  • 1 beef or sheep stomach (for casing, cleaned and rinsed)
  • 1-2 cucharada cooking oil (for frying)

Instrucciones
 

  • Prepare the casing
    Rinse the beef or sheep stomach thoroughly under cold water.Optional: Soak in lightly salted water for 30 minutes.
  • Prepare the filling
    In a large bowl, combine minced meat, chopped offal, onion, garlic, and all spices.Mix thoroughly until ingredients are evenly distributed.
  • Stuff the casing
    Carefully fill the cleaned stomach with the meat mixture.Avoid overfilling to prevent bursting during cooking.Tie the ends securely with kitchen string.
  • Cook the pofadder
    Preheat oven to 180°C (350°F) or prepare a braai/fire for indirect cooking.Option 1: Oven – Place the stuffed stomach in a roasting pan, cover, and bake for 1–1.5 hours until cooked through.Option 2: Braai – Wrap in foil and cook over indirect heat for 1–1.5 hours, turning occasionally.
  • Optional finishing
    For a crispy exterior, brush with a little oil and roast or braai for the last 10–15 minutes uncovered.
  • Servir
    Slice into thick rounds and serve with braaibroodjies, pap, or spicy chutney.
