Umkhuphu
Umkhuphu is a traditional South African main dish of crumbly maize meal mixed with beans. Hearty and perfect for a wholesome meal.

- 1 taza dry sugar beans (or speckled beans)
- 2 tazas white maize meal
- agua
- sal (opcional)
Cook the beans firstSoak beans overnight (or at least 6–8 hours).Boil in fresh water until soft. Do not drain all the water. Add maize mealWith the beans still simmering, sprinkle maize meal slowly into the pot.Stir lightly to form crumbs, not a smooth pap. Steam togetherLower heat, cover the pot, and let it steam for 20–30 minutes.The maize should cook using the bean water for flavour. Fluff and finishGently fluff with a fork.Add a pinch of salt if desired.If too dry, sprinkle a little hot water, cover, and steam again briefly.
