Banana Bread

Banana Bread. Follow this simple method to recreate a beloved classic at home.

Ingrédients
  

  • 3 large ripe bananas (the riper, the better)
  • ½ cup (125 g) melted butter or oil
  • ¾ cup (150 g) brown sugar (or ½ cup honey for a healthier option)
  • 2 large eggs
  • 1 ½ cups (190 g) cake flour or all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions
 

  • Preheat your oven to 180°C (350°F). Grease and line a loaf tin with baking paper.
  • In a large mixing bowl, mash the bananas until smooth (a few small chunks are fine).
  • Stir in the melted butter and mix until combined.
  • Add the sugar (or honey) and eggs, whisking until smooth.
  • In a separate bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
  • Add the dry ingredients to the banana mixture and fold gently until just combined. Do not overmix.
  • Fold in nuts or chocolate chips if using.
  • Pour the batter into the prepared loaf tin and bake for 50–55 minutes, or until a skewer inserted into the centre comes out clean.
  • Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
