Preheat your oven to 180°C (350°F). Grease and line a loaf tin with baking paper.
In a large mixing bowl, mash the bananas until smooth (a few small chunks are fine).
Stir in the melted butter and mix until combined.
Add the sugar (or honey) and eggs, whisking until smooth.
In a separate bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
Add the dry ingredients to the banana mixture and fold gently until just combined. Do not overmix.
Fold in nuts or chocolate chips if using.
Pour the batter into the prepared loaf tin and bake for 50–55 minutes, or until a skewer inserted into the centre comes out clean.
Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
