- 500 g green beans, trimmed and cut into bite-sized pieces
- 4 medium potatoes, peeled and chopped
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 100 g bacon or smoked ham, diced (optional)
- 2 tbsp butter
- ¼ cup milk
- salt and pepper, to taste
- 1 tbsp cooking oil
Cook the potatoes: Boil in salted water until tender, about 15–20 minutes. Drain and mash with butter, milk, salt, and pepper. Keep warm.
Cook the beans: Heat oil in a pan. Add bacon (if using) and fry until lightly crisp. Add onion and sauté until soft.
Add tomatoes: Stir in chopped tomatoes and cook for 2–3 minutes until they soften.
Add green beans: Add the beans and a splash of water. Cover and simmer for 10–15 minutes until beans are tender. Season with salt and pepper.
Serve: Plate the potato mash and top with the sautéed green beans mixture. Serve immediately.
