Preheat oven to 180°C and line a baking tray with baking paper.
Melt the butter, sugar, and golden syrup together in a saucepan over low heat.
Remove from the heat and stir in the flour, ginger, and lemon juice until smooth.
Drop small teaspoonfuls of the mixture onto the tray, spaced well apart.
Bake for 7–8 minutes until spread out and bubbling with a golden-brown colour.
Allow to cool slightly, then gently shape over a wooden spoon handle or rolling pin if you want the traditional curled brandy snap shape. Leave to harden.
