Prep the bread: Butter each slice of bread. Cut into triangles or cubes. (If you like, spread some apricot jam too.)
Layer the dish: Grease an ovenproof dish. Layer the buttered bread in it, overlapping slightly. Sprinkle raisins or dried fruit between layers.
Make the custard: In a bowl, whisk together the milk, eggs, sugar, vanilla, cinnamon, and salt until smooth.
Pour & soak: Pour the custard mixture evenly over the bread. Press the bread down gently so it soaks up the liquid. Let it stand for 10–15 minutes.
Bake: Preheat oven to 180°C (350°F). Sprinkle a little cinnamon and sugar over the top. Bake for 35–40 minutes, or until the custard is set and the top is golden brown.
Serve: Best served warm with custard, cream, or even a scoop of vanilla ice cream.
