Curried Beans

Curried Beans. This authentic recipe is simple to make and guaranteed to impress.

Ingrédients
  

  • 2 cups dried beans (or 3 cans cooked beans, drained)
  • 2 medium potatoes, peeled and diced (optional)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1–2 fresh chilies, chopped (optional)
  • 400 g chopped tomatoes (fresh or canned)
  • 2 cups water or vegetable stock
  • 2 tbsp oil
  • salt and pepper to taste
  • fresh coriander/cilantro for garnish (optional)

Instructions
 

  • If using dried beans, soak overnight and cook until tender.
  • Heat oil in a pot and sauté onion, garlic, and chilies until soft.
  • Add curry powder, turmeric, and cumin; cook 1–2 minutes until fragrant.
  • Stir in tomatoes and water/stock; bring to a simmer.
  • Add diced potatoes and cooked beans. Simmer 20–30 minutes, or until potatoes are tender and sauce thickens.
  • Season with salt and pepper.
  • Garnish with fresh coriander if desired.
  • Serve hot with rice, pap, or bread.
