Easy Traditional Malva Pudding

Ingrédients
  

For the sponge

  • 2 tbsp unsalted butter
  • 1 cup light brown sugar
  • 2 tbsp apricot jam
  • 2 tsp white vinegar
  • 2 cups cake flour
  • 2 cups milk
  • 2 large eggs
  • 2 tsp bicarbonate of soda
  • 1 tsp kosher salt

For the soak

  • cup light brown sugar
  • ¼ cup boiling water
  • ¾ cup fresh cream
  • cup unsalted butter
  • 2 tsp vanilla essence

Instructions
 

For the sponge

  • Melt the butter, sugar, jam and vinegar together in a small saucepan over medium heat, stirring until the sugar is fully dissolved. Remove from heat and allow to cool for a few minutes.
  • In a separate bowl, combine the dry ingredients. Add them to the butter mixture, alternating with the milk, mixing well between each addition.
  • Whisk in the eggs.
  • Pour the batter into a greased rectangular baking dish and bake at 180°C for 30 minutes, or until golden brown.

For the syrup

  • While the sponge is baking, combine the syrup ingredients and bring to a boil in a saucepan. Reduce heat and simmer for 5 minutes.
  • Once the sponge is out of the oven, pour the hot syrup over it.
  • Let the pudding stand for 20 minutes to absorb the syrup before serving.
