Inxala (Maize Meal Dumplings)

Inxala is a traditional South African dish made from cracked maize (samp), slowly cooked until soft and creamy. Deeply rooted in isiXhosa food culture, it is a nourishing and comforting meal commonly enjoyed as a hearty main dish.

Ingrédients
  

  • 2 cups maize meal (white or yellow)
  • 1½–2 cups warm water
  • ½ tsp salt (optional)

Instructions
 

  • Mix the dough: Place maize meal in a bowl. Add salt if using. Gradually add warm water while mixing until a soft but firm dough forms. It should hold shape but not be sticky.
  • Shape the dumplings: Pinch off portions of dough and roll into balls about the size of a small lemon. Flatten slightly if preferred.
  • Cook the inxala
    Bring a pot of water to boil.
    Gently place the dumplings into the boiling water.
    Reduce heat, cover, and simmer for 25–30 minutes.
    The dumplings are ready when they float and are cooked through.
  • Serve hot: Remove with a slotted spoon and serve immediately.
