Jan Ellis Pudding

Ingrédients
  

  • 1 cup (250 ml) flour
  • 1 tsp baking powder
  • 1 cup (250 ml) sugar
  • 1 egg
  • 1 tbsp apricot jam
  • 1 tsp bicarbonate of soda
  • 1 tbsp butter (melted)
  • 1 tsp vinegar
  • 1 cup (250 ml) milk
  • Pinch salt
  • 1 cup (250 ml) cream for the sauce
  • ½ cup (125 ml) sugar for the sauce
  • ½ cup (125 ml) water for the sauce
  • 2 tbsp butter for the sauce
  • 1 tsp vanilla essence for the sauce

Instructions
 

  • Preheat oven to 180°C. Grease an ovenproof baking dish.
  • In a bowl, beat the egg, sugar and apricot jam until light.
  • Melt the butter and add the vinegar and milk.
  • Sift the flour, baking powder, bicarb and salt together.
  • Mix the dry ingredients into the wet ingredients and stir until smooth.
  • Pour the batter into the dish and bake for 30–35 minutes, or until golden and springy.
  • While it bakes, make the sauce: heat all sauce ingredients in a saucepan until the sugar dissolves and it starts to boil gently.
  • As soon as the pudding comes out of the oven, pour the hot sauce over it slowly so it soaks in.
  • Serve warm with custard, cream or ice cream.
