- 1 medium cabbage (chopped)
- 2–3 potatoes (peeled & cubed)
- 1 onion (chopped)
- 1–2 tomatoes (chopped) or 1 tin chopped tomatoes
- 2 tbsp oil
- 1–2 tsp curry powder (optional but common in SA versions)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1–2 cups water or stock
- 1 carrot (sliced) (optional)
- 1 green pepper (chopped) (optional)
- 1–2 cloves garlic (optional)
Fry the base: Heat oil in a pot. Fry onion (and garlic if using) until soft and slightly golden.
Add flavour: Stir in curry powder and cook for about 30 seconds to bring out the flavour.
Add tomatoes: Add fresh or canned tomatoes and cook for 5–10 minutes until slightly thickened.
Add vegetables: Add cabbage, potatoes, and any extra veg (carrot, pepper). Stir well.
Simmer: Add water or stock. Cover and simmer on low heat for about 30–40 minutes until everything is soft.
Season: Add salt and pepper. Taste and adjust.
