- 2 cups maize meal (pap)
- 6–8 cups water
- 2–4 tbsp sugar (optional)
- 1 tsp salt (optional)
- ¼ cup starter (leftover mageu, sour porridge, or plain yogurt)
Cook the maize meal with water and salt until it becomes a thick, smooth pap.
Remove from heat and let it cool completely to room temperature.
Add extra cold water to thin it into a drinkable consistency.
Mix in your starter (this helps fermentation begin).
Cover loosely and leave at room temperature for 1–3 days.
Stir once or twice daily and taste until it is slightly sour.
Refrigerate once ready and serve cold. Add sugar if you like it sweeter.
