Ingrédients
  

  • 2 cups maize meal (pap)
  • 6–8 cups water
  • 2–4 tbsp sugar (optional)
  • 1 tsp salt (optional)
  • ¼ cup starter (leftover mageu, sour porridge, or plain yogurt)

Instructions
 

  • Cook the maize meal with water and salt until it becomes a thick, smooth pap.
  • Remove from heat and let it cool completely to room temperature.
  • Add extra cold water to thin it into a drinkable consistency.
  • Mix in your starter (this helps fermentation begin).
  • Cover loosely and leave at room temperature for 1–3 days.
  • Stir once or twice daily and taste until it is slightly sour.
  • Refrigerate once ready and serve cold. Add sugar if you like it sweeter.
