Makataan Preserve. Follow this simple method to recreate a beloved classic at home.

- 1 medium Makataan
- 1 kg sugar
- 1 L water
- 1 tbsp lime (calcium hydroxide) or 1 tsp baking soda
- 1 cinnamon stick
- 2–3 slices fresh ginger (optional)
- 1 tbsp lemon juice
Prepare the Makataan: Peel the makataan and remove seedsCut into cubes or thick strips
Soak (important step): Mix water with lime (or baking soda)Soak the pieces overnight (8–12 hours)This keeps them firm and slightly crunchy
Rinse: Drain and rinse thoroughly 2–3 timesMake sure no lime/bicarb taste remains
Pre-cook: Boil the pieces in clean water for 10–15 minutesDrain
Make syrup: In a pot, heat:1 litre water1 kg sugarcinnamon + gingerStir until sugar dissolves
Cook the preserve: 👉 You’ll know it’s ready when:Add makataan pieces to syrupSimmer gently for 1.5–2 hoursStir occasionallyPieces look translucent / glassySyrup is thick and glossy Finish: Add lemon juiceSimmer 5 more minutes
Bottle: Spoon into sterilised jars while hotSeal and let cool
