- 1 litre full cream milk
- ¼ cup cake flour
- ¼ cup maize meal (mieliepap or maize porridge)
- 1 cinnamon stick
- ¼ tsp salt
- 2 tbsp sugar (or to taste)
- Ground cinnamon for serving
- 2 tbsp butter (optional, for richness)
In a pot, heat the milk over medium heat. Add the cinnamon stick and bring to a gentle simmer.
In a bowl, mix the cake flour and maize meal with a bit of cold water to make a smooth slurry.
Slowly pour the flour mixture into the simmering milk, stirring continuously to avoid lumps.
Add the salt and sugar, and keep stirring until the mixture thickens. This can take around 10 to 15 minutes.
Once thick and creamy, remove the cinnamon stick and stir in a small knob of butter if desired.
Serve warm in bowls, sprinkled with ground cinnamon and a bit of extra sugar if you like.
