Ingrédients
  

  • 2 cups cake flour
  • ½ cup icing sugar
  • 250 g cold butter, cubed
  • 1 large egg yolk
  • 2–3 tbsp cold water
  • 1 jar (400g) fruit mince
  • 1 egg (for egg wash)
  • icing sugar for dusting

Instructions
 

  • Start by making the pastry. In a bowl, rub the flour, icing sugar, and butter together with your fingertips until the mixture resembles breadcrumbs. Add the egg yolk and just enough cold water to bring it together into a soft dough. Wrap the dough in cling film and chill it in the fridge for about 30 minutes.
  • While the dough chills, preheat the oven to 180°C and grease a muffin or tartlet tin. Roll the pastry out on a lightly floured surface until about 3 mm thick. Cut out circles large enough to fit into the base and sides of the muffin tin. Press these circles gently into the tins.
  • Spoon about a tablespoon of fruit mince into each pastry case. Roll out the remaining pastry and cut smaller circles, stars, or other shapes to use as lids. Place them on top of the filled cases and press the edges lightly to seal.
  • Beat the egg and brush it over the tops to give them a golden colour while baking. Place the tray in the oven and bake for 15 to 20 minutes until the pastry is crisp and golden.
  • Remove from the oven, allow the pies to cool slightly, then dust with icing sugar before serving. Enjoy them warm or cold.
