Salomi. Follow this simple method to recreate a beloved classic at home.

Ingrédients
  

  • 500 g chicken breast or thighs, diced
  • 1 onion, chopped
  • 2–3 garlic cloves, crushed
  • 1 tbsp ginger, grated
  • 2–3 tbsp curry powder (mild or hot)
  • 1 tsp turmeric (optional)
  • 1 tsp cumin
  • 2 tbsp oil
  • 1–2 tomatoes, chopped (or 2 tbsp tomato paste)
  • Salt to taste
  • chilli or peri-peri sauce (optional)
  • 4 large rotis, wraps, or flatbreads
  • Lettuce, shredded
  • Sliced tomato
  • Sliced onion
  • Mayonnaise and/or chutney
  • grated cheese (optional)

Instructions
 

  • Heat oil in a pan and fry onion until soft.
  • Add garlic and ginger and cook for 1 minute.
  • Add curry powder, cumin, turmeric, and stir to release flavour.
  • Add chicken and cook until it starts to brown.
  • Add tomatoes (or paste) and a splash of water.
  • Simmer for 15–20 minutes until chicken is cooked and sauce is thick.
  • Season with salt and add chilli if you want extra heat.
  • Warm the roti or flatbread.
  • Spread mayo or chutney.
  • Add lettuce, tomato, onion, and chicken curry filling.
  • Roll tightly like a wrap or fold like a sandwich.
  • Optional: toast lightly in a pan for a crisp finish.
