Preheat the oven to 180°C and grease or line a baking tray.
In a large bowl, sift together the flour, baking powder, and salt.
Rub the butter into the flour mixture until it resembles fine breadcrumbs.
Beat the eggs and milk together.
Gradually add the wet ingredients to the flour mixture and mix to form a soft dough.
Roll out the dough on a lightly floured surface to about 5 mm thick.
Cut into rounds, squares, or traditional biscuit shapes.
Place on the prepared baking tray.
Brush the tops with beaten egg and sprinkle generously with coarse salt.
Bake for 12–15 minutes, or until lightly golden.
Allow to cool slightly before serving.
