Ingrédients
  

  • 2 cups dried sugar beans (or 2 x 400 g cans, drained)
  • 1 onion, finely chopped
  • 2 tbsp cooking oil
  • 2 cloves garlic, crushed
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground cumin (optional)
  • 2 tomatoes, chopped, or 2 tbsp tomato paste
  • 2 medium potatoes, cubed
  • 2 cups water or vegetable stock
  • 1 tbsp chutney (optional)
  • Salt and pepper to taste
  • Fresh coriander for garnish (optional)

Instructions
 

  • If using dried beans, soak them overnight and cook until tender. Drain and set aside.
  • Heat the oil in a pot and sauté the onion until soft and golden.
  • Add the garlic, curry powder, turmeric, and cumin. Fry for 30 seconds until fragrant.
  • Stir in the tomatoes or tomato paste and cook for 2–3 minutes.
  • Add the potatoes, cooked sugar beans, and water or stock.
  • Stir in the chutney, salt, and pepper.
  • Bring to a simmer and cook for 20–30 minutes, or until the potatoes are tender and the sauce has thickened.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh coriander before serving.
