Ting Porridge. Follow this simple method to recreate a beloved classic at home.

Ingrédients
  

  • 1 cup ting (fermented sorghum drink)
  • ½ cup maize meal (fine or medium)
  • 2 cups water (or adjust for desired thickness)
  • pinch of salt
  • sugar, milk, or butter for serving (optional)

Instructions
 

  • Mix maize meal and ting: In a bowl, combine the maize meal with a little ting to make a smooth paste.
  • Boil water: In a pot, bring water and a pinch of salt to a boil.
  • Add maize meal-ting mixture: Slowly pour the paste into boiling water while stirring constantly to prevent lumps.
  • Simmer and stir: Reduce heat and cook for 10–15 minutes, stirring frequently until the porridge thickens.
  • Adjust consistency: For a softer, creamier porridge, add extra ting or water as it cooks.For firmer porridge, cook longer and stir less.
  • Serve: Serve hot, optionally with sugar, milk, or a knob of butter. Ting porridge has a naturally slightly sour taste from the fermentation, which pairs well with sweeteners.
