Ingrédients
  

  • 2 pig’s trotters, cleaned and cut in half
  • 1 cup dried sugar beans (or butter beans), soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped or ½ cup tinned tomatoes
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp paprika or mild chili powder (optional)
  • 1 bay leaf
  • 2 tbsp oil
  • water or stock to cover

Instructions
 

  • Prepare the trotters: Clean the pig’s trotters thoroughly. Cut in half if needed. Blanch in boiling water for 5 minutes, then drain and set aside.
  • Sauté aromatics: Heat oil in a large pot. Sauté onion and garlic until soft and fragrant.
  • Add trotters and beans: Add the trotters, drained beans, tomato, salt, pepper, paprika, and bay leaf. Stir to combine.
  • Add liquid: Cover everything with water or stock. Bring to a boil, then reduce heat to low.
  • Slow cook: Simmer gently for 2–3 hours, stirring occasionally, until the trotters are tender and the beans are soft. Add more water if needed.
  • Adjust seasoning: Taste and adjust salt and pepper. Remove the bay leaf before serving.
