Prepare the trotters: Clean the pig’s trotters thoroughly. Cut in half if needed. Blanch in boiling water for 5 minutes, then drain and set aside.
Sauté aromatics: Heat oil in a large pot. Sauté onion and garlic until soft and fragrant.
Add trotters and beans: Add the trotters, drained beans, tomato, salt, pepper, paprika, and bay leaf. Stir to combine.
Add liquid: Cover everything with water or stock. Bring to a boil, then reduce heat to low.
Slow cook: Simmer gently for 2–3 hours, stirring occasionally, until the trotters are tender and the beans are soft. Add more water if needed.
Adjust seasoning: Taste and adjust salt and pepper. Remove the bay leaf before serving.
