Umkhuphu

Umkhuphu is a traditional South African main dish of crumbly maize meal mixed with beans. Hearty and perfect for a wholesome meal.

Ingrédients
  

  • 1 cup dry sugar beans (or speckled beans)
  • 2 cups white maize meal
  • water
  • salt (optional)

Instructions
 

  • Cook the beans first
    Soak beans overnight (or at least 6–8 hours).
    Boil in fresh water until soft. Do not drain all the water.
  • Add maize meal
    With the beans still simmering, sprinkle maize meal slowly into the pot.
    Stir lightly to form crumbs, not a smooth pap.
  • Steam together
    Lower heat, cover the pot, and let it steam for 20–30 minutes.
    The maize should cook using the bean water for flavour.
  • Fluff and finish
    Gently fluff with a fork.
    Add a pinch of salt if desired.
    If too dry, sprinkle a little hot water, cover, and steam again briefly.
