Ingrediënten
  

  • 2 kopjes white maize meal (pap / mielie meal)
  • 1–1½ kopjes warm water (as needed)
  • 1 tsp zout (optional, to taste)
  • extra water for adjusting consistency

Instructies
 

  • Mix the dough:
    Place the maize meal in a bowl. Gradually add warm water, mixing until you form a thick, smooth batter. It should be softer than stiff pap but not runny.
  • Ferment:
    Cover the bowl loosely with a lid or cloth. Leave it in a warm place for 2–3 days to ferment. Stir once a day. The mixture should develop a sour smell and small bubbles on the surface.
  • Season (optional):
    Once fermented, stir in salt if using. Add a little water if the mixture has thickened too much. The texture should be spoonable.
  • Prepare for steaming:
    Grease a heatproof bowl, tin, or cloth-lined steamer container. Pour in the fermented maize mixture, smoothing the top.
  • Steam:
    Place in a steamer over gently boiling water. Cover and steam for 1½–2 hours, checking water levels and topping up as needed.
  • Test for doneness:
    The bread is ready when it is firm, fully set, and no longer sticky in the centre.
  • Cool and serve:
    Allow to cool slightly before slicing or scooping.
