Clean the head well: Ensure the sheep’s head is properly cleaned and any remaining wool is removed. Many butchers will pre-prepare it.
Prepare the pot: Place the sheep’s head in a large pot and cover with water.
Add flavouring: Add onion, garlic, bay leaves, salt, pepper, curry powder, and stock cube.
Boil slowly: Bring to a boil, then reduce heat and simmer for 2.5 to 4 hours until the meat is very soft and falling off the bone.
Controleer de gaarheid: The skin should be soft, and the meat should easily pull away.
Optional roasting step (for crispy skin): Place the cooked head under the grill or in the oven for 10–15 minutes to crisp up the skin.
