- 2 kopjes maïsmeel
- 1 kopje crushed sorghum malt
- 10 L water (approx.)
- 1 packet instant yeast (optional, for faster fermentation)
Mix maize meal with water in a large pot and cook into a thick porridge. Stir continuously to avoid lumps. Allow it to cool completely.
Once cooled, mix in the sorghum malt thoroughly. This begins the fermentation process and gives the drink its signature flavour.
Transfer the mixture into a large container. Cover loosely (do not seal tightly) and leave in a warm place for 2–3 days. Stir once or twice a day.
The umqombothi is ready when it has a sour aroma, slightly foamy top, and a thin porridge-like consistency.
For a smoother drink, strain through a fine sieve or cloth before serving.
