A chilled prawn salad with mango, cucumber and avocado, finished with a creamy lemon dressing and fresh coriander.
Ingredients
- 500 gcooked, peeled and deveined prawns (Chilled, tails removed; weight after thawing and draining, not whole shell-on weight)
- 100 gcrisp lettuce (Cos or butter lettuce, washed, thoroughly dried and torn)
- 250 gcucumber (Halved lengthways, watery seeds scraped out, then sliced)
- 200 gmango flesh (From about 1 medium mango; ripe but firm, cut into 2 cm cubes)
- 150 gavocado flesh (About 1 medium avocado, diced just before assembling)
- 40 gred onion (Very thinly sliced)
- 10 gfresh coriander (Leaves and tender stems, roughly chopped)
- 60 mlmayonnaise (Use a good-quality commercial mayonnaise)
- 60 mlplain thick yoghurt (Unsweetened)
