  • 30 mlolive oil (2 tablespoons.)
  • 5 mlDijon mustard (1 teaspoon.)
  • 5 mlsugar (1 teaspoon; balances the vinegar.)
  • 2.5 mlfine salt (½ teaspoon, plus a little more to taste if needed.)
  • 1.25 mlfreshly ground black pepper (¼ teaspoon.)
  • 10 gflat-leaf parsley (Leaves and tender stems, roughly chopped.)

    Put the sliced red onion in a small bowl with the red wine vinegar and sugar. Toss well and leave for 10 minutes, stirring once, to soften the onion's sharp bite.

    Meanwhile, wash and dry the tomatoes. Remove the hard stem cores, then cut the tomatoes into bite-sized wedges about 2 cm thick. Keep the seeds and juicy centres.

    Lift the onion out of the vinegar with a fork and place it in a wide serving bowl with the tomatoes. Leave the vinegar mixture in the small bowl.
