Avocado Salad
A fresh avocado salad with cucumber, cherry tomatoes, feta and lemon dressing that serves six as a braai side.
Ingredients
- 3ripe avocados (medium-large, yielding about 450 g flesh; ripe but still firm enough to slice)
- 250 gcucumber (about half a large English cucumber)
- 250 gcherry tomatoes (halved)
- 40 gred onion (about half a small onion, very thinly sliced)
- 100 gfeta (drained and roughly crumbled)
- 10 gfresh flat-leaf parsley (roughly chopped)
- 30 mlfresh lemon juice (plus a little extra to taste, if needed)
- 30 mlolive oil
- 5 mlDijon mustard (1 teaspoon)
- 1.25 mlfine salt (¼ teaspoon; use less if your feta is very salty)

Put the sliced red onion in the mixing bowl, cover with cold water and leave for 5 minutes while you prepare the vegetables. Drain thoroughly and pat dry; this takes the sharp edge off the raw onion.

Halve the cucumber lengthways. If the centre is especially watery, scrape out the loose seeds with a teaspoon, then cut into 1 cm half-moons. Halve the tomatoes and chop the parsley.

In a small jar, combine the lemon juice, olive oil, mustard, salt and pepper. Close the lid and shake until blended.

Halve and stone the avocados, then scoop out the flesh and cut into roughly 2 cm chunks. Place in the drained mixing bowl and gently coat with half the dressing.
