A fresh beetroot and feta salad with rocket, toasted pumpkin seeds and a lemon-mustard dressing that balances rich braai meats.
Ingredients
- 800 gfresh beetroot (About 5 medium beetroot of similar size, scrubbed; leave the skins, roots and 2 cm of stalk intact.)
- 150 gfeta cheese (Drained and broken into chunky pieces.)
- 40 grocket (Washed and thoroughly dried.)
- 50 gred onion (About half a small onion, very thinly sliced.)
- 25 gpumpkin seeds (Unsalted.)
- 45 mlolive oil
- 30 mlfresh lemon juice
- 10 mlhoney (2 teaspoons.)
- 5 mlDijon mustard (1 teaspoon.)
- 1/4 tspfine salt (For the dressing; reduce if your feta is particularly salty.)

Method

Place the whole, unpeeled beetroot in a saucepan and cover with cold water by about 3 cm. Bring to the boil, then reduce to a steady simmer and partially cover. Cook for 40–55 minutes, until a small knife slides easily into the centre; large beetroot may need longer.

Meanwhile, toast the pumpkin seeds in a dry frying pan over medium heat for 3–4 minutes, shaking the pan often, until lightly golden and starting to pop. Tip onto a plate immediately and leave to cool.

Whisk the olive oil, lemon juice, honey, mustard, salt and pepper together in a mixing bowl. Add the sliced red onion and leave for 10 minutes to soften its bite.

Drain the beetroot and rinse briefly under cold water until comfortable to handle. Rub off the skins, trim the ends and cut into roughly 2 cm wedges or chunks.
