A chilled mushroom salad with red pepper, parsley and a lemon-mustard dressing, perfect alongside smoky braai meats.
Ingredients
- 500 gbutton mushrooms (White or brown; trim dry stem ends, halve small mushrooms and quarter larger ones.)
- 45 mlolive oil (30 ml for frying and 15 ml for the dressing.)
- 150 gred pepper (Prepared weight, seeds removed and flesh cut into small dice; about 1 medium pepper.)
- 50 gred onion (About half a small onion, very thinly sliced.)
- 30 mlfresh lemon juice (Plus a little extra to taste.)
- 10 mlDijon mustard (2 teaspoons.)
- 5 mlhoney (1 teaspoon, to soften the lemon's sharpness.)
- 1 clovegarlic (Small, finely grated.)
- 15 gfresh flat-leaf parsley (Leaves and tender stems, finely chopped.)
- 2.5 mlfine salt (½ teaspoon, divided; adjust to taste.)
- 1.25 mlground black pepper (¼ teaspoon.)

Wipe the mushrooms clean, or rinse them briefly and dry thoroughly. Halve or quarter them into roughly 2–3 cm pieces. Prepare the red pepper, onion and parsley.

In a shallow, heatproof serving bowl, whisk together the lemon juice, mustard, honey, garlic, 15 ml olive oil, half the salt and the black pepper. Stir in the sliced onion and leave it to soften while you cook the mushrooms.

Heat a wide frying pan over medium-high heat. Add 15 ml olive oil and half the mushrooms in a single layer. Leave undisturbed for 2–3 minutes, then turn and cook for another 4–5 minutes, until tender and golden with no watery liquid remaining in the pan. Transfer to the dressing.

Repeat with the remaining 15 ml frying oil and mushrooms. If they release plenty of water, allow an extra minute or two for it to evaporate. Sprinkle the remaining salt over the cooked mushrooms, then toss both batches gently in the dressing while still warm.
