This is my kind of quinoa salad for a braai: plenty of crunchy cucumber, sweet tomatoes and parsley, with enough feta to make every forkful interesting. The lemon dressing is bright rather than sharp, and tossing it through cooled, fluffy quinoa keeps the salad light instead of stodgy.
It brings a lovely fresh contrast to smoky Lamb Sosaties and takes the edge off spicy Peri-Peri Chicken. It is filling enough that you do not need another substantial starch, although there is always room on the table for something from the Braai Salads collection.
For an easier braai day, cook and chill the quinoa and mix the dressing the day before, then add the vegetables, herbs and feta on the day. Cool cooked quinoa promptly in a shallow layer and keep the salad refrigerated at 5°C or below, or in a cooler box with plenty of ice packs. In our summer heat, put out a small bowl and top it up from the fridge: discard salad left unrefrigerated for more than 2 hours, or 1 hour when the temperature is above 32°C.

Quinoa Salad

Tip the quinoa into a fine-mesh sieve and rinse under cold running water for about 30 seconds, rubbing the grains gently with your fingers. Drain well.

Place the quinoa, 360 ml water and salt in a small saucepan. Bring to the boil, cover and turn the heat down low. Simmer gently for 12-15 minutes, until the water is absorbed and the grains are tender with little curled tails. Remove from the heat and leave covered for 5 minutes. If still firm and dry, add 30 ml water and cook gently for another 2-3 minutes.

Fluff with a fork and spread in a thin layer on a clean, shallow serving platter. Let the steam escape for 5-10 minutes, then refrigerate until cool, usually another 15-20 minutes.
