Rice Salad
Jump to recipe ↓
This is the sort of rice salad I like alongside a braai: colourful, economical and full of things you can pick up in an ordinary supermarket. Parboiled rice keeps its shape, while sweetcorn, red pepper and carrot add crunch and colour. A simple chutney-and-mustard dressing brings everything together without making the salad heavy or creamy.
The sweet-tangy dressing is particularly good with Lamb Sosaties, and it offers a cooling contrast to Peri-Peri Chicken. It also suits smoky pork ribs and grilled boerewors. If you’re planning a bigger spread, browse the Braai Salads collection for another crunchy or leafy side.
You can make this the evening before, but cooked rice needs careful cooling, even without mayonnaise. Spread it thinly, refrigerate promptly—ideally within an hour—and keep the finished salad at 5°C or colder. In our summer heat, transport it in a cooler box with ice packs and serve small bowls rather than leaving the whole batch beside the fire.
Tips & Techniques
- Keep the grains separate: Parboiled long-grain rice is forgiving in a cold salad. Follow your packet’s cooking instructions if its water ratio differs, and stop cooking when the grains are tender rather than soft and split.
- Drain the corn properly: Excess liquid waters down the dressing and collects at the bottom of the bowl. Let the kernels drain well before adding them.
- Cut everything small: Dice the pepper into roughly 5 mm pieces so each forkful has a little rice, crunch and sweetness.
- Taste after chilling: Rice absorbs dressing as it stands. If the salad tastes a little flat, try another 5 ml vinegar before adding more salt or chutney.
- Keep it properly cold: No mayonnaise does not mean safe at room temperature. Keep at 5°C or colder, and discard salad left out for over 2 hours in total, or over 1 hour when the temperature exceeds 32°C.
Delicious Variations
- Less sweet: Leave out the sultanas and reduce the chutney to 30 ml for a sharper, more savoury salad.
- Brown rice: Substitute 250 g uncooked long-grain brown rice, following its packet’s water quantity and longer cooking time. Cool it just as carefully.
- A little chilli: Add 1 small deseeded, finely chopped green chilli to the dressing for a gentle bite alongside boerewors or chicken.
- Extra beans: Fold in 240 g drained, rinsed red kidney beans for a heartier salad; add a little extra vinegar and seasoning to taste.
Serving Suggestions
- With sosaties: Spoon alongside lamb sosaties, where the chutney dressing complements the sweet, spiced marinade.
- With spicy chicken: Serve chilled with peri-peri chicken and a plain green salad for a refreshing contrast.
- For a full braai table: Pair with boerewors, braaibroodjies and sliced tomatoes; allow smaller portions when several starches are on offer.
- For a picnic or outdoor braai: Pack in a sealed container in a cooler box with ice packs, and refill a small serving bowl as needed.
Frequently Asked Questions (FAQs)
Q1: Can I make rice salad the day before?
Yes. Make it the evening before, cool the rice promptly and refrigerate the finished salad at 5°C or colder. For this recipe, use it within 24 hours of cooking the rice. Give it a gentle stir and check the seasoning before serving.
Q2: How long can I keep leftovers?
Use properly chilled leftovers within 24 hours of cooking the rice, not 24 hours after serving. Discard any salad that has been out of refrigeration for more than 2 hours in total, or 1 hour in temperatures above 32°C. If you cannot be sure it stayed cold during transport or load shedding, discard it; smell is not a reliable safety check.
Q3: What can I substitute for the chutney or mustard?
For the 45 ml chutney, use 30 ml apricot jam plus 15 ml extra apple cider vinegar for a similar sweet-tangy balance. Replace Dijon with the same amount of wholegrain mustard, or omit it for a milder dressing. Taste and adjust once the salad is cold.
Q4: How many people does this quantity serve?
It makes about 1.3 kg, enough for 8 side portions of roughly 160 g. With several other salads and bread, it can stretch to 10 smaller portions. For 16 regular side portions, double the ingredients and cool the rice on two trays rather than piling it onto one.
Q5: Can I use leftover cooked rice?
Yes—use about 700–750 g cold cooked rice, provided it was cooled promptly and kept refrigerated at 5°C or colder. Use the salad within 24 hours of when that rice was originally cooked. Do not use rice that stood overnight on the stove or sat out through a previous meal.
In Summary
This rice salad brings crunch, colour and a gently sweet chutney dressing to the braai table without a long shopping list. Make it ahead, keep it properly chilled and serve alongside sosaties, boerewors or spicy chicken.

Recipe
Rice Salad
A colourful rice salad with sweetcorn, peppers, sultanas and a tangy chutney-mustard dressing that serves eight as a braai side.
Ingredients
- 250 gparboiled long-grain rice (Uncooked; avoid quick-cooking rice for this method.)
- 625 mlwater (Or the quantity specified on your rice packet for absorption cooking.)
- 5 mlfine salt (Divided between the rice and dressing; adjust to taste.)
- 160 gsweetcorn kernels (Drained weight; use canned sweetcorn, not cream-style.)
- 150 gred pepper (About 1 medium pepper, deseeded and cut into small dice.)
- 100 gcarrot (About 1 medium carrot, peeled and coarsely grated.)
- 3spring onions (Trimmed and thinly sliced.)
- 40 gsultanas (For little pockets of sweetness.)
- 10 gfresh flat-leaf parsley (Finely chopped.)
- 45 mlsunflower oil
- 30 mlapple cider vinegar
- 45 mlfruit chutney (A mild peach or apricot chutney works well; finely chop any large fruit pieces.)
- 10 mlDijon mustard
- 1 mlground black pepper (Plus extra to taste.)
Equipment
- Medium saucepan with a tight-fitting lid
- Large shallow tray
- Large mixing bowl and whisk
- Chopping board, knife and coarse grater
Method
- 1
Put the rice, water and 2.5 ml of the salt into a medium saucepan. Bring to the boil, cover and reduce to a gentle simmer. Cook for about 20 minutes, or according to the packet’s absorption instructions, until the rice is tender and the water is absorbed. Remove from the heat and leave covered for 5 minutes.
- 2
Fluff the rice with a fork, then spread it straight away on a clean, shallow tray in a layer no deeper than 2 cm. Let the heavy steam escape briefly, then refrigerate promptly, ideally within 1 hour of cooking. Do not leave it on the counter to cool completely. Allow roughly 45–60 minutes for chilling, in addition to the prep and cooking times.
- 3
While the rice chills, drain the sweetcorn thoroughly and prepare the pepper, carrot, spring onions and parsley. Keep the prepared vegetables refrigerated until needed.
- 4
In a large mixing bowl, whisk together the oil, vinegar, chutney, mustard, remaining 2.5 ml salt and black pepper until well combined.
- 5
Add the cold rice, sweetcorn, pepper, carrot, spring onions, sultanas and parsley. Fold gently until evenly coated, breaking up any rice clumps without mashing the grains.
- 6
Cover and refrigerate for at least 30 minutes so the flavours settle. Taste before serving and adjust the salt, pepper or vinegar if needed. Serve chilled, keeping the main bowl refrigerated and putting out smaller portions at the braai.
