Sweet Potato Salad

A colourful roasted sweet potato salad with feta, spring onions, parsley and pumpkin seeds, tossed in a tangy lemon-mustard dressing.

Ingredients

  • 1.2 kgorange-fleshed sweet potatoes (Weight before peeling; peel and cut into roughly 2.5 cm cubes.)
  • 60 mlolive oil (30 ml for roasting and 30 ml for the dressing.)
  • 2.5 mlfine salt (For roasting; taste before adding any more, as feta is salty.)
  • 1.25 mlground black pepper (Plus extra to taste.)
  • 40 gpumpkin seeds (Shelled and unsalted.)
  • 150 gfeta (Drained and roughly crumbled.)
  • 3spring onions (Trimmed and thinly sliced, including the tender green parts.)
  • 15 gflat-leaf parsley (Leaves and tender stems, roughly chopped.)
  • 30 mllemon juice (Freshly squeezed.)
  • 10 mlwholegrain mustard

Method

    Heat the oven to 220°C, or 200°C fan. Divide the sweet potato cubes between two large shallow baking trays. Add the roasting oil, salt and pepper, then toss well. Spread into a single layer with a little space between the pieces.

    Roast for 30-35 minutes, turning after 20 minutes and swapping the trays around if they are browning unevenly. The cubes should have golden edges and feel tender when pierced, but still hold their shape. Start checking at 25 minutes.

    While the sweet potatoes roast, toast the pumpkin seeds in a dry frying pan over medium heat for 3-4 minutes, shaking often, until fragrant and beginning to pop. Tip onto a plate immediately so they do not burn.

    Shake the remaining 30 ml olive oil, lemon juice, mustard and honey together in a small lidded jar. Prepare the spring onions, parsley and feta.
