This is my kind of unfussy Tuna Salad: proper flakes of tuna, sweetcorn, crunchy cucumber and red pepper, all lightly coated in a lemony mayonnaise-and-yoghurt dressing. There’s no pasta or potato to cook, and the yoghurt keeps the dressing creamy without making it too heavy.

For a relaxed braai, prepare the components the evening before and combine them on the day. A crunchy tuna and sweetcorn salad with a light mayonnaise-and-yoghurt dressing, ready in 20 minutes and perfect for sharing at a braai.
Ingredients
- 340 gtuna chunks in brine (2 × 170 g tins; drain thoroughly to give approximately 240–260 g tuna)
- 200 gsweetcorn kernels (drained weight; use tinned kernels, not cream-style sweetcorn)
- 200 gcucumber (weighed whole; scoop out the watery centre, then cut into small cubes)
- 120 gred pepper (prepared weight, deseeded and finely diced; approximately 1 small pepper)
- 40 gred onion (finely chopped; approximately ¼ medium onion)
- 75 mlmayonnaise (commercial mayonnaise)
- 60 mlplain thick yoghurt (unsweetened)
- 15 mllemon juice (freshly squeezed)
- 5 mlDijon mustard
- 30 mlfresh parsley (finely chopped, plus a few leaves for serving if desired)

Tip the tuna and sweetcorn into a sieve and leave to drain for 5 minutes while you prepare the vegetables. Press very gently to release trapped liquid without mashing the tuna.
