Ingredients
- 1 cup cake flour
- ½ cup chickpea flour (or use all cake flour if you don’t have)
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½–1 tsp chilli powder (to taste)
- 1 small onion, finely chopped
- 2–3 green chillies, finely chopped
- ½ cup sweetcorn (optional but very good)
- 2 tbsp fresh coriander, chopped
- ¾ cup water (add gradually)

Instructions
- In a bowl, mix the flours, baking powder, salt, turmeric, cumin, coriander and chilli powder.
- Add the onion, chillies, sweetcorn and fresh coriander.
- Slowly add water and mix until you get a thick batter. It should drop off a spoon but not be runny.
- Heat oil over medium heat. Test by dropping a tiny bit of batter in. It should sizzle and rise.
- Spoon tablespoons of batter into the oil. Don’t overcrowd.
- Fry until golden brown, turning occasionally, about 3–4 minutes.
