Introduction

Smoorwors is a traditional South African dish of juicy boerewors slowly simmered in a rich tomato, onion, and pepper sauce until tender and full of flavour. A beloved comfort food, smoorwors is commonly served with pap, rice, mashed potatoes, or fresh bread. Its hearty, savoury taste and simple preparation make it a favourite family meal throughout South Africa.

Tips & Techniques

  • Brown the wors first: This adds flavour and helps keep the sausage juicy during simmering.
  • Cook onions slowly: Allow them to soften and sweeten for a richer sauce.
  • Simmer gently: Low heat allows the flavours to develop fully.
  • Use good-quality tomatoes: They form the base of the sauce and greatly affect the final flavour.
  • Rest before serving: A few minutes off the heat allows the sauce to settle and thicken.

Delicious Variations

Flavour Variations

  • Spicy smoorwors: Add chilli flakes or fresh chilli for extra heat.
  • Garlic-rich version: Increase the garlic for a deeper savoury flavour.
  • Mushroom smoorwors: Add sliced mushrooms for extra texture and richness.
  • Smoky variation: Add smoked paprika for a subtle smoky flavour.

Serving Suggestions

  • With pap: The classic South African pairing.
  • Over rice: A simple and filling family meal.
  • With mashed potatoes: Perfect for soaking up the rich sauce.
  • With fresh bread: Ideal for mopping up every last bit of sauce.
