  • 3 el zout
  • 2 el chilipoeder
  • 1 el turmeric powder
  • 2 el crushed mustard seeds
  • 1 el fenugreek seeds (methi)
  • 2-3 teentjes knoflook, geperst (optioneel)
  • 1 kopje oil (sunflower or vegetable)

Instructies
 

  • Wash and dry the mangoes completely. Moisture can spoil the pickle.
  • Cut the mangoes into small cubes or slices, leaving the skin on if you like the texture.
  • Salt the mango pieces and leave them in a bowl for about 2–3 hours to release some moisture.
  • In a separate bowl, mix:
    chilipoeder
    kurkuma
    mustard seeds
    fenugreek seeds
    garlic (optional)
  • Verhit de olie until hot but not smoking, then let it cool slightly.
