- Do not overboil the squash: Cook until just tender so the shells hold their shape when stuffed.
- Scoop carefully: Leave a thin border of flesh inside to prevent collapsing.
- Season the filling well: Gem squash has a mild flavour, so proper seasoning makes a big difference.
- Drain excess liquid: If your mince mixture is too wet, simmer longer to avoid watery squash.

Ingrediënten
- 4 gem squash
- 1 el butter or oil
- 1 kleine ui, fijngesneden
- 1 clove garlic, crushed
- 250 g beef mince (or use chicken mince or tinned tuna)
- 1 tomato, chopped (or ½ tin chopped tomatoes)
- salt and black pepper
- 1 tsp gemengde kruiden
- ½ kopje grated cheddar
- cooked rice, chutney, sweetcorn, bacon bits (optioneel)
Instructies
- Cook the gem squash: Wash them and cut in half. Scoop out the seeds. Boil in salted water for about 15 to 20 minutes until soft but not falling apart. Drain and let them cool slightly. Scoop out some of the flesh carefully, leaving a thin border so the shell keeps its shape. Set the scooped flesh aside.
- Make the filling: Heat butter or oil in a pan. Fry the onion until soft. Add garlic and cook briefly. Add mince and cook until browned. Stir in tomato, mixed herbs, salt and pepper. Add the scooped gem squash flesh and mash it into the mixture. If you want it bulkier, mix in a spoon or two of cooked rice.
- Stuff and bake: Spoon the filling back into the gem squash halves. Top with grated cheddar. Bake at 180°C for about 15 to 20 minutes until the cheese is melted and golden.
