  • 1 cup cake flour
  • ½ cup chickpea flour (or use all cake flour if you don’t have)
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½–1 tsp chilli powder (to taste)
  • 1 small onion, finely chopped
  • 2–3 green chillies, finely chopped
  • ½ cup sweetcorn (optional but very good)
  • 2 tbsp fresh coriander, chopped
  • ¾ cup water (add gradually)
  • oil for deep frying

Instructions
 

  • In a bowl, mix the flours, baking powder, salt, turmeric, cumin, coriander and chilli powder.
  • Add the onion, chillies, sweetcorn and fresh coriander.
  • Slowly add water and mix until you get a thick batter. It should drop off a spoon but not be runny.
  • Heat oil over medium heat. Test by dropping a tiny bit of batter in. It should sizzle and rise.
  • Spoon tablespoons of batter into the oil. Don’t overcrowd.
  • Fry until golden brown, turning occasionally, about 3–4 minutes.
  • Remove and drain on paper towel. Serve hot.
