Uphuthu (Umphokoqo) is a traditional South African maize meal dish known for its dry, crumbly texture. Steamed rather than stirred smooth, it is simple, filling, and deeply rooted in everyday home cooking. Uphuthu is commonly enjoyed with amasi (sour milk), milk and sugar, or served as a comforting side alongside savoury stews.

  • Maize meal: Use white maize meal for the most traditional flavour and texture.
  • Steaming method: Avoid excessive stirring; allowing the maize meal to steam creates the correct crumbly consistency.
  • Fluffing: Use a fork rather than a spoon to break up and fluff the pap.
  • Vochtbeheersing: Add small splashes of boiling water if it becomes too dry.
